This recipe was originally posted in March of 2012 – but I think it deserves some attention! I bet this would be a wonderful dish to serve right before Trick-or-Treating tonight!

I needed a quick meal to feed the little rugrats this evening, so I just threw this Cilantro Lime Chicken together into the slow cooker last minute before they came home from school. I turned it on high since I got a late start and was using frozen chicken breasts, and it was done before we left for dance a few hours later. Prep time was minimal and allowed me to hang out with the kiddos for a bit! All three kids gave it a thumbs up!
Gather
Step by Step
- Pour 1 cup chicken broth in slow cooker.
- Mix in taco seasoning.
- Add chicken breasts. I just threw mine in totally frozen!
- Add in salsa and fresh cilantro, squeeze in juice from a fresh lime.
- Cook on high for 4-5 hours or low 6-7 hours.
- Chicken should be tender enough to shred with a fork!
- Scoop into a tortilla, add optional ingredients.
- ENJOY!
